Vegan Blueberry Pancakes

Ingredients: 

 

¼ cup all-purpose flour

¼ tbsp agave nectar

1 tsp baking powder

½ cup unsweetened almond milk

⅛ tsp salt

¼ tsp vanilla extract

1 scoop protein powder of your choice

½ cup blueberries

 

Instructions: 

 

1. In a large mixing bowl, combine together flour, coconut sugar, baking powder, salt, and protein powder.

2. Mix well and pour in almond milk

3. Add vanilla extract and agave nectar. Mix until the batter is a smooth consistency and all clumps are removed.

4. Grease a non-stick pancake pan with some oil and heat up over medium-high heat

5. Add 1/4 cup of the batter and cook for 1-2 minutes or until small bubbles form and the edges start to crisp.

6. Carefully flip and continue to cook for another minute

7. Remove from the pan, top with agave nectar and blueberries to serve
